- 1 cup steel-cut oats
- 3 cups water
- 1 cup unsweetened milk
- 2 tablespoons chia seeds
- 1 teaspoon ground cinnamon
- 0.25 teaspoon fine sea salt
- 1 cup fresh blueberries
- 0.5 cup chopped walnuts
- 1 teaspoon vanilla extract
- 0.5 cup plain Greek yogurt
Instructions
- Combine the water, milk, cinnamon, and salt in a medium saucepan and bring to a gentle simmer over medium heat.
- Stir in the steel-cut oats. Reduce the heat to low and cook uncovered for 20 to 25 minutes, stirring occasionally, until the oats are tender and creamy.
- Stir in the chia seeds and vanilla extract. Cook for 2 minutes more, adding a splash of water or milk if the oatmeal becomes too thick.
- Divide the oatmeal among four bowls. Top each serving with blueberries, walnuts, and a spoonful of Greek yogurt.
- Serve warm. If desired, add extra cinnamon, but avoid sweetened toppings to keep the recipe free of added sugar.
