Chile con Queso with Tortilla Chips

Ingredients
- 12 6-inch tortillas corn tortillas
- 1 quart vegetable oil
- 1 teaspoon, plus more for chips kosher salt
- 1 tablespoon unsalted butter
- 1/2 small, finely diced yellow onion
- 1 small, seeded and finely diced jalapeño
- 1 clove, minced garlic
- 10 ounces diced tomatoes with green chiles
- 1/2 cup evaporated milk
- 12 ounces, deli-sliced or grated American cheese
- 4 ounces, grated Monterey Jack cheese
- 1/4 teaspoon ground cumin
- 2 tablespoons, chopped fresh cilantro
Instructions
- Stack the corn tortillas and cut each into 6 wedges. Line a large plate or baking sheet with paper towels.
- Heat the vegetable oil in a heavy saucepan or Dutch oven to 350°F (175°C). Fry the tortilla wedges in batches for 1 to 2 minutes, turning once, until crisp and lightly golden. Transfer to the paper towels and season immediately with salt. Allow the oil to return to temperature between batches.
- Melt the butter in a medium saucepan over medium heat. Add the onion and jalapeño and cook for 3 to 4 minutes, stirring, until softened. Add the garlic and cook for 30 seconds.
- Stir in the diced tomatoes with green chiles, evaporated milk, and cumin. Warm gently until steaming but do not boil.
- Reduce the heat to low. Add the American cheese and Monterey Jack a handful at a time, stirring constantly until each addition melts before adding more. Continue stirring until the queso is smooth and glossy.
- Stir in the cilantro and taste for seasoning. If the queso is too thick, add 1 tablespoon of warm evaporated milk at a time until it reaches a smooth dipping consistency.
- Transfer the queso to a warmed serving bowl and serve immediately with the tortilla chips. Keep it warm over a very low flame or in a small slow cooker, stirring occasionally.
