Halloumi Fries
At a Cypriot meze table, platters of halloumi arrive hot from the grill, ready to be tugged apart while everyone reaches for the next piece. Here, the famously springy cheese takes a crisp panko coat…
Ingredients
- 225 g halloumi cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 1 teaspoon dried oregano
- 2 tablespoon olive oil
- 3 tablespoon honey
- 1/2 teaspoon red pepper flakes
- 1 lemon
Instructions
- Heat the oven to 425°F and line a baking sheet with parchment. Pat the halloumi dry, then cut it into thick fry-shaped sticks so the centers stay pleasantly chewy.
- Set out three shallow bowls. Put the flour in the first, beat the eggs in the second, and stir the panko with the oregano in the third.
- Coat each halloumi stick in flour, dip it through the beaten egg, and press it into the oregano panko until fully covered. Arrange the pieces on the prepared baking sheet with space between them.
- Drizzle the coated halloumi with the olive oil. Bake for 10 minutes, turn each piece carefully, and bake for another 8 to 10 minutes until the crust is deeply golden and the cheese is soft but not leaking.
- While the fries bake, warm the honey with the red pepper flakes and the finely grated zest of half the lemon in a small saucepan over low heat for 1 to 2 minutes. Do not let it boil.
- Transfer the hot halloumi fries to a platter, drizzle with the spicy lemon honey, and finish with a squeeze of lemon. Serve immediately while the coating crackles and the centers still have their signature squeak.
